The Best Way to Cook Live Lobsters!
Pour two inches of water into a large enough pot to comfortably hold the lobsters (the lid should still fit snugly with the lobsters inside.) Throw in a tablespoon of salt. Bring water to a rolling boil over high heat. Place lobsters in the pot, cover tightly, return to a boil as quickly as possible and start counting the time.
A the typical Hardshell Large Lobster (1½ lb) cooks for ~20 minutes. Softshells take about 18 minutes.
Because shells may turn red before the water even returns to a boil, do not use color as an indicator. Set the timer on your stove or watch the clock, and enjoy!
